Monte Blanco  est un vin blanc de l'A.O.C. Rueda produit par la cave Ramón Bilbao. C'est une cave fondée en 1924, qui s'est adaptée aux techniques modernes sans perdre les caractéristiques d'une préparation traditionnelle.

Le domaine est situé dans la ville de Haro, La Rioja Alta, un lieu historique dans la vinification, où la plus forte concentration d'établissements vinicoles dans le monde.

Monte Blanco  est composé de 100% Verdejo. Les raisins proviennent de vignes plantées sur des sols hétérogènes, peu profonds et bien drainés.

Le développement de Monte Blanco  l'oxydation dans les raisins et les moûts faciliter le nettoyage.

Une fois dans la cave les raisins sont refroidis et amenés dans les pressoirs pneumatiques. Le moût est décanté dans des réservoirs en acier inoxydable où, après décantation, fermentation lente est effectuée.

La cave Ramón Bilbao a été distingué par IWSC (International Wine & Spirit Competition) comme le meilleur vin d'Espagne 2014.
